The Suntory Yamazaki Distillery, the oldest whiskey distillery in Japan, is located in Yamazaki Gorge at the foot of Mt. Ten-no, on the border between Kyoto and Osaka. Yamazaki Gorge is famed for the quality of its spring water. It was in 1923 when Shinjiro Torii, founder of Suntory, commenced manufacture of whiskey at the factory, for the first time in Japan. A factory tour is offered whereby visitors can learn the history of Suntory whiskey and see the expertise that has been developed over many years. The first Japanese whiskey, called Suntory Whiskey Shirofuda (white label), was released in 1929. During the few years until its release, the distillery attracted a lot of attention from curious neighbors, who gossiped among themselves that the factory might keep a monster that consumed such large quantity of grains, because nothing came out of the factory, though many bags of grain had been carried into it. Clear and colorless young whiskey is kept in wooden casks to mature for many years. When it becomes an amber liquor of mild aroma, ready for processing, blenders blend the young whiskeys of different characteristics to produce a blended whiskey of highly sophisticated taste and mellow bouquet. The Distillery tour enables visitors to see production processes, from preparation to fermentation, distillation, storage and bottling. Visitors can also sample some whiskey, free of charge. The approximately 90-minute tour also includes a visit to the Yamazaki Whiskey Museum, located on the same premises, where visitors can learn about the history and process of Suntory's whiskey production. A tasting counter at the Museum offers various kinds of quality whiskeys, as well as young whiskey, available only at distilleries (charged).
